A speciality created by Chef Marco combining lettuce, sweetcorn, gherkins and feta cheese to make a rich and tasty side that catches with its contrast of flavours. This dish is very versatile and can be adapted with the addition of other ingredients, such as sunflower seeds or cooked ham.

150g of iceberg lettuce
40g of sweetcorn (tinned)
60g feta cheese
4-5 cherry tomatoes
3 tbsp extra virgin olive oil
Preparation: 5 minutes
Wash and drain the lettuce and cut roughly with a knife. Drain the sweetcorn and cut the gherkins into small pieces. Cut the feta into small cubes and the tomatoes into halves. Take all the ingredients and put them in a bowl. Add a pinch of salt and the olive oil and mix together. Serve in bowls.
