Ristorante Mozzarella

"The classic thin crust pizza style is covered with a mixture of mozzarella and edam cheese.  It also has some spinach in the mix and a lovely sweet basil pesto.  Not too sweet, the mozzarella cheese has a lovely creamy texture and the basil flavour gives a lovely sweet lift. 

Full fat soft cheese needs a wine with acidity to cut through the fat. These white wines will do the job!

This classic white comes from the Piedmont region in Northern Italy.  The area is best known for its full bodied red wines such as Barolo and Barbaresco; however, the region also produces white wines made from the Cortese grape.  This is a classic Italian white wine, low in alcohol, high in acid.  Cortese di Gavis are light, crisp and have pleasant aromas of almonds, citrus fruits and freshly mowed grass.  This is a perfect wine to serve with pizza topped with soft fat cheeses.

One of the most popular grape varieties for those who love white wine is Pinot Grigio from Northern Italy.  This wine comes from the region of Santa Margherita in the Veneto region.  Acidic white wines were made to go with anything with cheese or cream in it.  The natural acidity compliments the full bodied cheese flavour.  The delicate apple and pear flavours of this wine will compliment the creamy texture and herb flavours of the mozzarella cheese.
