"This is made from a blend of mozzarella and edam cheese topping with a tomato sauce that has a slight sweetness to it.  The tomato flavours stand out and match really well with the hot spicy meat flavours of the pepperoni and salame. 

This is a meat focused pizza so we are opting for a red wine.  Red wine contains a surfactant that cleanses your mouth, removing fat deposits, re-exposing your taste buds and allowing you to savour the next bite of meat almost as much as the first."

Santa Rita is the biggest selling Chilean wine in Ireland.  Their Merlot is a classic example of a soft, fruity, easy drinking style, with enough soft tannin to work well with this pizza.  Merlot dominated wines have a good soft tannin structure and plummy flavours, and ideal to serve with meat topped dishes.   A perfect match for the spicy meaty flavours of pepperoni and salame and the slight sweetness of the tomato sauce.

Australia’s Rosemount Estate Blended Range is a full bodied "drink now" style of wine.  It offers great value and the ripe fruit and soft approachable tannin make this the perfect wine to match with spicy pepperoni pizza.  The wine is made from a blend of 85% Shiraz and 15% Cabernet Sauvignon.  The complex peppery flavours in the meats match the spice of this big peppery grape.
