GET BAKING! 1. To cover a cake: spread a thin layer of smooth apricot jam or buttercream on the cake. 2. To cover a layer of marzipan: brush the marzipan with water. 3. Carefully unroll: ensure the icing is at room temperature, to prevent cracking. Carefully and slowly unroll the icing. 4. Drape over cake: lift the plastic sheet and drape over your cake, icing side down. Gently peel away the platic sheet. 5. Smooth down: smooth the icing over the cake from the top to the edges and down the sides. Trim away any excess icing with a sharp knife. 6. For a perfect finish: polish the icing using the the palm of your hand to create a sheen on the surface.
