Ingredients

Funfetti Ice-Cream Cookie Sandwiches
85 gUnsalted butter (softened)
100 gCaster Sugar
170 gPlain Flour
1Egg
1 tspDr. Oetker Madagascan Vanilla Extract
0.5 tspDr. Oetker Baking Powder
Dr. Oetker Bright and Bold 4-Cell (Plus extra sprinkles of your choice to roll your ice-cream sandwich in)
Ice Cream (A few scoops of ice-cream of your choice)

Beat together the butter, sugar, egg and Dr. Oetker Madagasan Vanilla Extract.

Next incorporate the flour and the Dr. Oetker baking powder, along with the Dr. Oetker Bright & Bold Sprinkles. Mix together to form a dough.

Shape the dough into a log (it doesn't need to be perfect) and wrap in cling film.

Chill the dough in the freezer for 30-40 minutes. Remove from the freezer and slice into 16 pieces.

Put the slices on a greased baking sheet and bake 8-9 minutes at 200C (180C Fan Oven). You will know when they are ready when they are a nice golden brown on the bottom.

Allow the cookies to cool completely. Then scoop 1-2 tablespoons of ice cream between two cookies and sandwich together. Roll in Dr. Oetker Sprinkles of your choice and then freeze 30 minutes before serving. Enjoy!
